White and Green ASPARAGUS of Friuli and its Producers

  Asparagus is a very important vegetable both for characteristic taste, the fibres’ richness, B C vitamins, folic acid, mineral salts and other healthy properties (diuretic).

  The White Asparagus is more soft and fleshy, the Green one is more tasty and compact, calling to wild asparagus (it is lightly bitterish).

  Both are also preserved in oil or sweet-and-sour.


  The white and green Asparagus are the same type of vegetable: their difference comes from the cultivation method:

- the White Asparagus grows under ground because its roots (‘rhizomes’) are thrusted into the ground at the dept of 30-40 cm, then the stem (‘turion’) develops underground until its top rises to the surface: in this moment it is ready for the harvesting;

- the Asparagus becomes Green, instead, when its roots are thrusted a little under ground and then the turion develops, as any other vegetable, all out of the ground acquiring the natural green colour of chlorophyll produced by the sunlight.

  The White Asparagus is forced to become bigger than the Green one because otherwise it could not have the strength of win, for growing, the weight of the soil staying above.

  In the Friuli region the cultivation of Asparagus gives excellent results in the areas where the soil is more loose (mixed with sand or gravel): lagoon areas and between low and high plains.

The Asparagus grows only in the spring: at Friuli’s latitude from the end of March to the end of May, but it is possible a postponement of about fifteen days, because of cold weather.
